Our friends from the iconic Arcade Bakery in NYC were generous enough to share their formula for this classic French country bread. The Arcade Sourdough is naturally leavened and baked only at the perfect time, usually 48 hours after being mixed.  This sourdough is made with whole milled flours, including whole wheat and stone ground rye, imparting a sophisticated flavor with a balanced acidity.
