Fermentation: Poolish & Levain
Fresh-milled whole wheat flour is mixed with clover honey and sunflower seeds. Our whole wheat bread utilizes both poolish and levain starters, giving it an earthy flavor with a soft, open crumb and a touch of sweetness.
